Perhaps the only thing better than the olive at the bottom of a martini glass is an entire bowl of boozy olives. We discovered this dish at a restaurant in upstate New York a few years back and have been obsessed ever since. It’s easy to make and bound to impress the guests are your next cocktail party.
Bottoms up!
Ingredients 1/3 cup olive oil 3 garlic cloves, cut in vertical halves 1 teaspoon black peppercorns 2 tablespoons citrus peels 3 tablespoons gin ½ cup green olives (or any combination of your favorites from the olive bar) Fresh herbs, such as rosemary or thyme.
Add olive oil to a small saucepan. Add garlic and bring to medium heat. Sauté to release the flavors of the garlic, being careful not to brown it.
Stir in peppercorns, citrus peels and herbs. Continue to cook for two minutes.
Add the gin and olives. Stir to coat the olives with the gin, oil and spices. Cook for 7 to 8 minutes, stirring occasionally.
Remove the olives from the heat and let sit for 10 to 30 minutes.
Serve warm.
